The following pair of recipes shows you what you can do with vegetables. If you thought vegetables were boring, think again, because there is nothing dull about these delicious Indian vegetable cutlets!

A Lachha Paratha is composed of many layers - many more than a normal paratha. Also, the layers here are horizontal as well as vertical, as opposed to only vertical in a normal Paratha. This is made by rolling out a Roti, spreading oil or ghee on the surface and then cutting it into strips. These strips are place one on top of the other and holding the pile by both ends, twisted into a roundish shape. This is then rolled flat and cooked on a griddle. Another way of making this is to make a long cylindrical shape with the dough, coating it with oil and starting from one end, making it into a wheel shape with concentric circles. As with technique #1, this is then rolled flat and cooked on a hot griddle, or in a Tandoor.
 

 


Consume warm milk mixed with one teaspoon of clarified butter/Desi Ghee during the bed time regularly for a week or so. It is quite effective in curing the constipation.

Someone who eats this food each day will end up with many health problems, including high blood pressure. There is no point blaming genetics if you consume ghee every day, for example.

Another way to achieve relief from earaches is to chop up a radish into very small pieces. Add these radish bits into mustard oil and heat it up. Then, put the resulting oil into a bottle. Whenever an earache pops up, put a couple of drops into the affected ear for rapid relief.

 

 



Add a fistful of lentils (pulses) viz. green grams-whole or split-and equal quantity of rice, cooking them into a thick gruel then add a pinch of turmeric and salt to taste along with half a spoon of coriander powder and a little cumin seed powder plus a little red chilly powder. If you so desire, a very small quantity of asafoetida can be added for flavouring. Lo and behold, Khichri is ready to eat for two people. You can garnish it with coriander leaves and a pinch of roasted cumin seed powder. You can put a finely chopped tomato to give a twist to its taste. Finely chopped green chillies can send it soaring on Scoville scale of hotness.

Take a sharp knife and cut a slit from the centre of the circle out to the edge. Put the knife check here down and take hold of one of the new edges and fold it back about two inches. Continue folding the same piece again and again until you end up with a flat but layered triangle.

There was a time when it was difficult finding ingredients for cooking Indian food. But not anymore. Most supermarkets have international food counters that store Indian spices and sauces. Also, there must be a local Indian store near where you live. Go pick up stuff and cook up an Indian storm, literally!
